Peach Bellini

Ingredients

2 ripe Sweet peach (peeled and de-stoned)
8 Raspberries
½ cup Cold water
Pinch of sugar
1 bottle Prosecco,Champagne, or Sparkling wine
Optional: mint leaves

Instructions

Blitz the fruit and water in a blender or muddle the fruit in the bottom of a cocktail shaker until you get a smooth purée.
Mix the water into yourpurée. Then strain the fruit puree through a fine sieve.
Add 1 shot of purée to an elegant flute and top almost to the brim with prosecco.
Finally, use your long spoon from the Barillio bartender kit to give the cocktail a quick stir and garnish with mint leaves.
